Savage & Cooke Cask Finished Rye Whiskey - Grenache | $13
California | American Rye Whiskey | 100 Proof | All grain is grown within 50 miles of the distillery. Direct relationships have been forged with local farmers and grain is grown to a precise specification. Rye makes up the bulk of the recipe, followed by corn and malted barley. White American Oak Char #3 barrels are hand-crafted by local cooper Seguin Moreau and the Rye is aged for a minimum of three years, and often longer. All aging is done on site in one of three locations, all with ideal yet different conditions relating to temperature, humidity, sunlight and air flow. Once deemed mature by Master Distiller Jordan Via, a portion of the Rye is transferred to Dave Phinney’s Grenache barrels for a period of about two months. Nevada | Straight Bourbon Whiskey | 116 Proof | Blending vintages of our high rye mash bill to achieve this flavor profile at 115-116 plus proof was a very rewarding challenge. There is a delicate balance between creamy mouthfeel, tannins and sugars that comes into play that makes the end result magical. Older vintages have more evaporation which means a higher concentration of fats and sugars per ounce which gives them a nice creamy mouthfeel as well as caramel and honey goodness. They also have more tannins because alcohol has been in contact with the wood for longer. A lot of what some perceive as alcohol burn is actually a harshness due to tannins. This can counterbalance the benefit gained by the high concentration of lipid esters insulating your pallet from alcohol heat. There needs to be enough of the older bourbon for the oak flavors and mouthfeel, but also some younger ones to cut back on the tannins and bring in some delicate fruit and caramel flavors. No water added because none is needed. We took the same vintage blending philosophy that we used to create Small Batch, except this time the goal was to create high proof bourbon that tasted its best neat. The extended time spent finishing in the Hine Cognac XO barrels is quite evident throughout Hirsch The Cask Strength’s sip. It kicks off with rich bold baking spices and ripe plums that are hard to miss, yet never too overpowering, and is a fantastic way to start. The palate delivers drier notes focusing on oak, leather, and cinnamon stick but also delivers just enough variation of dark fruit notes and chocolatey malt to never go overboard. Rounding out on familiar notes of cinnamon, rye spice, and aged oak, the finish delivers a very nice balance to cap things off. Taken as a whole, the sip is very well composed and does a great job of utilizing the finishing barrel choice to enhance the base bourbon. Bottled in bond is a label for an American-made distilled beverage that has been aged and bottled according to a set of legal regulations contained in the United States government's Standards of Identity for Distilled Spirits, as originally laid out in the Bottled-in-Bond Act of 1897. As a reaction to widespread adulteration in American whiskey, the act made the federal government the guarantor of a spirit's authenticity, gave producers a tax incentive for participating, and helped ensure proper accounting and the eventual collection of the tax that was due. Although the regulations apply to all spirits, most bonded spirits are whiskeys in practice.
To be labeled as bottled-in-bond or bonded, the liquor must be the product of one distillation season (January–June or July–December) by one distiller at one distillery. It must have been aged in a federally bonded warehouse under U.S. government supervision for at least four years and bottled at 100 (U.S.) proof (50% alcohol by volume). The bottled product's label must identify the distillery where it was distilled and, if different, where it was bottled. Only spirits produced in the United States may be designated as bonded.
Some consumers consider the term to be an endorsement of quality, while many producers consider it archaic and do not use it. However, because bottled-in-bond whiskey must be the product of one distillation season, one distillery, and one distiller – whereas ordinary straight whiskey may be a product of the mingling of straight whiskeys (of the same grain type) with differing ages and producers within a single state – it may be regarded as a better indication of the distiller's skill, making it similar in concept to a single malt whisky, small batch whiskey, or single barrel whiskey.

Let’s first discuss what makes ‘Single Pot Still’ something special. For starters, it’s the only whiskey making process that is unique to Ireland. In contrast to single malt, single pot still indicates use of both malted and unmalted barley in the mash bill, which provides a unique “spiciness” indicative of this unusual style. This method was first attempted in the 1800s, not as a way to improve flavor, but as a way to cut costs. Luckily for 19th century whiskey distillers, the grain variance along with the use of traditional pot stills added complexity instead of an air of cheapness.

If you’re not someone who drinks a lot of brown liquor, the difference between bourbon and whiskey might not seem all that apparent. After all, both bourbon and whiskey are brown liquids—they look about the same. And to add to the possible confusion, if you just refer to bourbon as whiskey, you wouldn’t be wrong. Bourbon is a type of whiskey, much the way that champagne is a type of wine. So all bourbon is whiskey, but not all whiskey is bourbon.
Bourbon is a type of American whiskey, a barrel-aged distilled liquor made primarily from corn and needs to be at least 51% corn. What makes bourbon distinct from other whiskeys is the way it is manufactured and aged. All whiskey is spirit made from fermented grain and then aged in barrels. But the kind of grain and the kind of barrels determines the variety of whiskey. Per the American Bourbon Association, in order to be classified as bourbon, a whiskey needs to be distilled from a mixture of grains, or mash, that’s at least 51 percent corn. That corn gives bourbon its distinctive sweet flavor. All bourbon is whiskey, but not all whiskey is bourbon…
Bourbon also must be aged in new charred oak barrels, and cannot include any additives or colorings. Other whiskeys can be aged in barrels previously used to age other spirits, and they don’t necessarily need to be whiskey barrels—port, sherry, and rum casks are used in the aging process for non-bourbon whiskeys. To be designated “straight bourbon whiskey,” bourbon has to have been aged in new charred oak barrels for a minimum of two years.
When bourbon is barreled, it also has to hit a certain proof, or alcohol content in the spirit. The mash must be distilled at 160 proof (or 80 percent alcohol by volume) or less, and aged in barrels until it is no more than 125 proof (62.5 percent alcohol by volume) or less. Before bottling, bourbon is filtered and diluted down to no less than 80 proof (40 percent alcohol by volume). Other whiskeys have different ABV standards for barreling and distilling. The minimum bottling strength for Scotch whiskey, for example, is also 80 proof or 40 percent ABV, but there is no maximum or minimum ABV for the distillate.
You may have heard that in order to be a bourbon, the whiskey has to be from Kentucky. That’s not quite true—bourbon can be made outside that state. But to be designated a “Kentucky bourbon,” the spirit has to be both distilled and aged in Kentucky. The name “bourbon” even comes from old Bourbon, what is now Bourbon County, Kentucky. Most bourbon is made in Kentucky, but not all, so it has become synonymous with the spirit, much as the Champagne region in France is synonymous with champagne, even though sparkling wine using similar methods is produced elsewhere. So next time you order a bourbon, you know that what you’ll be getting in your glass isn’t just a whiskey, but a specific (and delicious) kind of whiskey.
